History of Pita

Pita bread is a form of flat bread and is known as Arabic bread. Similar types of bread are known by different names. A few of these include Baladi from Egypt, Bouri from Saudi Arabia, and Souri from Libya and North Africa. There are more than 60 types of flat bread made worldwide.

The history of pita has many versions presented online and in literature. Pita bread is one of the oldest recipes known to mankind. Mediterranean and Middle Eastern countries were the first to develop it and continue to use it as a food scooping utensil, and to wrap sandwiches. The word Pita is a generic term for round, flat bread. It originated from the Greek word Pitta, which is defined as:

Thin, flat layers. Later on, it was adopted by the Romans and used as a crust for Pizza. In modern history (in the 1970s), pita became famous because of the "pocket". Instead of using pita to scoop foods, Western civilizations preferred to fill the pocket with everyday sandwich fixings. As a result, the everchanging name continues to evolve, and is most commonly referred to as Pita Pockets or Pocket Pita.

Pita bread recipes differ from region to region but the basic ingredients are flour, water, salt, sugar, and yeast. Pita bread has a round shape, forms a pocket during baking, and has a golden brown crust color. During baking at high temperatures, the dry exterior skin of the proofed flat dough sets and carbon dioxide and steam expand until the pressure is sufficient to allow separation of the lower and upper layers.
